A Family Tradition
Rock Pillar Grounds is a multi-generational, family-run farm nestled in the Southwest corner of Missouri. While the farm itself was established in 1989, our family’s connection to the land stretches back through generations of cattle farmers and gardeners who understood the rhythm of the seasons and the value of hard work. That legacy lives on in everything we do.

Today, Rock Pillar Grounds is a vibrant, diversified farm committed to sustainability, self-sufficiency, and transparency. To protect our livestock and free-range chickens, we raise and breed Colorado Mountain Dogs. We offer fresh raw milk from our dairy cows, handled with care and integrity. Our beef cattle are pasture-raised with ethical practices, and our garden produce is grown with the same attention to quality and soil health that’s guided our family for decades.

We also bake and sell sourdough bread using traditional fermentation methods, craft herbal remedies like tinctures from wild-foraged and cultivated herbs, and stock our farm shop with thoughtfully sourced goods from neighboring farms—including tallow-based skincare and other natural commodities. Every product reflects our belief in knowing where our food and wellness items come from, and in supporting a healthier, more holistic way of life.

Legacy Builder
Connie is the heart behind Rock Pillar Grounds. From the earliest days of the farm, she brought grit, wisdom, and a deep understanding of what it means to live off the land. Her hands-on knowledge of food preservation, gardening, and seasonal rhythms laid the foundation for everything we do today.

Though she’s now retired, Connie remains an irreplaceable part of our farm family. She’s our mentor, our sounding board, and our biggest cheerleader—always encouraging new ideas, offering practical advice, and reminding us why this way of life matters. Her legacy runs through every jar we can, every seed we plant, and every step we take toward a more sustainable future.

Katrina Edie
Moo & Crew Supervisor
Katrina is the heartbeat of Rock Pillar Grounds. As Connie’s daughter and a founding member of the farm, she’s been hands-on since the beginning—milking cows at sunrise, feeding animals with care, and keeping every corner of the farm running smoothly. Her care and consistency ensure that every creature on the farm is well-tended and every task is done with purpose.

With a deep respect for the land and the animals it sustains, Katrina brings both tradition and innovation to her work. She plans to share her knowledge with the community, teaching the value of sustainable agriculture and the importance of knowing where your food comes from.

Colton Beltz
The Swiss Army Knife of RPG
Colton is the backbone of the farm—if it needs built, welded, lifted, or repaired, he’s already on it. He designs and fabricates custom equipment to make daily chores smoother, tackles mechanical repairs with ease, and handles the heavy lifting, from hay bales to fallen trees. Whether he’s mending fences, tagging livestock, or banding calves, Colton brings strength, skill, and a can-do attitude to every corner of the farm.

He’s got a quirky streak that keeps things interesting and a knack for saying “why not?” to even the wildest ideas. Whether it’s a new gadget for the goat pen or a brainstorm about barnyard logistics, Colton’s the first to jump in and make it happen. His positive attitude is contagious, and his work ethic is unmatched—no matter how dirty, heavy, or downright weird the job, he’s all in.

Amanda Beltz
Cultivator of Chaos
Amanda may be the newest face on the farm, but she’s the quiet storm behind our biggest leaps forward. With a sharp background in business management and a knack for turning dreams into reality, she’s transformed our homestead into a thriving farmshop that showcases not only our goods, but the bounty of fellow local farmers.

Her green thumb is matched only by her wild creativity— steeping herbal tinctures, perfecting a sourdough menu, simmering bone broth, and whipping up jellies. If it’s not listed on the chore chart, chances are Amanda’s already doing it. Marketing? Check. Branding? Check. Brainstorming new ventures over coffee and compost? Absolutely.
